Ingredients
1 tablespoon vegetable oil
2 tablespoons red curry paste
1 can coconut milk
1/4 cup chicken broth
2 tablespoons fish sauce
2 tablespoons brown sugar
1 teaspoon ground turmeric
1 teaspoon ground coriander
1/4 teaspoon ground cumin
3 boneless, skinless chicken breasts, cut into 1 inch cubes
2 potatoes, peeled and cubed
1 onion, chopped
2 carrots, peeled and sliced into rounds
1 bell pepper, seeded and diced
Salt to taste
Directions
Cut the half cucumber in half lengthwise. With the cut side down, cut each half crosswise into thin slices; place in a glass bowl. Add shallot slices and pepper slices to cucumber bowl; set aside.
