Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, melted and cooled slightly
3/4 cup sugar
2 large eggs, lightly beaten
1 teaspoon pure vanilla extract
3/4 cup buttermilk
1/2 cup currants or raisins
Directions
Preheat oven to 350°F . Grease and flour a 9-inch round cake pan. In a small bowl, combine the currants or raisins with the buttermilk and let sit for 10 minutes. In a large bowl, whisk together the vanilla extract, eggs, sugar, butter, salt, baking soda, and baking powder until combined. Add the flour to the wet ingredients and mix until just combined. Stir in the currant-buttermilk mixture until just combined. Do not overmix. Pour batter into prepared pan and bake for 25–30 minutes or until a toothpick inserted into center comes out clean. Let cool in pan for 10 minutes before turning out onto a wire rack to cool completely before serving.
