Ingredients
1 pound of unsalted butter
2 tablespoons of cold water
Cheesecloth or a fine mesh strainer
A medium-sized saucepan
Directions
Place the butter in a medium-sized saucepan and melt it over low heat. Once the butter is melted, increase the heat to medium-high and bring it to a boil. Reduce the heat to low and simmer for 15 minutes, stirring occasionally. Line a fine mesh strainer or cheesecloth with two layers of cheesecloth or paper towels and place it over a bowl or jar. Carefully pour the melted butter into the strainer, making sure to catch any solids that may have formed during cooking in the bottom of the pan. Discard these solids. Add 2 tablespoons of cold water to the strained butter and stir gently until combined. This will help separate any remaining solids from the clarified butterfat. Allow the mixture to cool for 10 minutes before transferring it to an airtight container for storage in the refrigerator for up to 3 months.
