Ingredients
2 large ripe tomatoes, cut into wedges
1/2 cucumber, peeled and sliced
1/4 red onion, thinly sliced
2 hard boiled eggs, quartered
1/4 cup black olives, pitted and halved
2 tablespoons capers
2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
Salt and freshly ground black pepper to taste
Directions
Combine shallot, garlic, mustard, anchovies, vinegar, and water in a large bowl and whisk to combine. Whisking constantly, slowly drizzle in olive oil. Alternatively, place all ingredients in a tightly sealing jar, seal, and shake vigorously until emulsified. Season to taste with salt and pepper. Vinaigrette will keep in the refrigerator for up to 2 weeks.
