8 ounces dark chocolate, chopped
1/2 cup unsalted butter
2 tablespoons Earl Grey tea leaves
4 large eggs, separated
1/4 teaspoon cream of tartar
1/2 cup granulated sugar
2 teaspoons dried lavender flowers
Directions
Adjust oven rack to middle position and preheat oven to 350 degrees F. Grease a 10-inch springform pan with 1 tablespoon butter and line exterior of pan with foil. Sprinkle 1 teaspoon Maldon salt over pan bottom.
