Ingredients
1/2 pound macaroni noodles
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded cheddar cheese, divided
1 can chickpeas, drained and rinsed
2 cups fresh spinach leaves, chopped
1/4 cup grated Parmesan cheese
Directions
Heat oil in a large saucepan over medium-high heat until shimmering. Add spinach and cook, stirring until wilted, about 30 seconds. Add garlic and cook, stirring, until fragrant, about 1 minute longer. Season to taste with salt and pepper. Transfer to a bowl and set aside. Fill pot with salted water and bring to a boil.
