Ingredients
2 tablespoons vegetable oil
1 teaspoon cumin seeds
2 medium onions, finely chopped
1 teaspoon ground ginger
1 teaspoon ground coriander
1/2 teaspoon turmeric
1/4 teaspoon cayenne pepper
2 large cloves garlic, minced
2 cups basmati rice, rinsed and drained
4 cups water or chicken broth
Salt to taste
2 pounds large shrimp, peeled and deveined
1/2 cup plain yogurt or sour cream
2 tablespoons chopped fresh mint leaves
2 tablespoons chopped fresh cilantro leaves
Directions
Toss rice into a mesh strainer and rinse under cold water until the liquid that comes off the rice is clear. Transfer to a large bowl and cover with water. Set aside for 30 minutes. When done, drain rice.
