Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
2 large eggs, lightly beaten
2 tablespoons vegetable oil, plus more for frying
8 ounces shiitake mushrooms, stemmed and sliced into thin strips
Kosher salt and freshly ground black pepper, to taste
For the Remoulade:
1 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons capers, drained and chopped finely
2 tablespoons minced fresh parsley leaves
2 teaspoons freshly squeezed lemon juice
1/4 teaspoon Worcestershire sauce
Directions
In a small bowl, stir together mayonnaise, mustard, lemon juice, hot sauce, scallions, and capers. Season with salt and pepper. Refrigerate until ready to use. .
