Ingredients
2 large eggplants, cut in half lengthwise
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1/2 teaspoon black peppercorns
2 tablespoons vegetable oil
1 medium onion, finely chopped
2 cloves garlic, minced
2 teaspoons grated fresh ginger
1 teaspoon ground turmeric
1/2 teaspoon ground cayenne pepper
2 tablespoons tomato paste
Salt to taste
2 tablespoons chopped fresh cilantro leaves
Directions
Slit eggplants lengthwise into quarters, taking care not to cut all the way through. The stem should still hold the entire vegetable together. In a small mixing bowl, combine red chilli powder, turmeric powder, cumin powder, amchoor powder , and 1 tablespoon oil into a paste. Season to taste with salt.
