Ingredients
2 tablespoons Massaman curry paste
1 tablespoon coconut oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 can coconut milk
2 tablespoons fish sauce
2 tablespoons brown sugar
1/2 teaspoon ground turmeric
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
2 cups eggplant, cubed
2 cups broccoli florets
Salt and pepper to taste
Directions
Use a spoon to remove 1/2 cup of the cream that has risen to the top of the coconut milk can. Heat cream in a wok over medium-high heat until bubbling. Add massaman curry paste, stir constantly, and cook until the fat starts to separate, about 5 minutes.
