Ingredients

1 2-3 lb. boneless pork loin roast

2 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons fresh thyme leaves, chopped

2 teaspoons fresh rosemary leaves, chopped

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

For the Crackling:

1/4 cup olive oil

3 cloves garlic, minced

For the Spiced Apple Chutney:

3 apples , peeled and diced into 1/2 inch cubes

1/4 cup apple cider vinegar

1/4 cup honey or maple syrup

1 tablespoon freshly grated ginger root

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Directions

Dry the skin as much as possible with a paper towel. Generously season the meat with kosher salt, including in between the ribs and meat. Place the roast on a wire rack set in a rimmed baking sheet. Transfer to the refrigerator and let rest, uncovered, at least overnight and up to three days.
