Ingredients
1 lb ground beef
2 tablespoons Sichuan peppercorns, toasted and ground
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
4 hamburger buns
4 slices of cheese
For the Chili-Ginger Mayo:
½ cup mayonnaise
2 tablespoons chili paste
2 teaspoons grated fresh ginger root
For the Cucumber Pickles:
1 large cucumber, thinly sliced into rounds or half moons
¼ cup white vinegar
2 tablespoons sugar
1 teaspoon salt
Directions
In a medium skillet, toast Sichuan peppercorns, cumin, red pepper flakes, fennel, and anise over high heat until fragrant, about 1 minute. Transfer to a mortar and pestle or spice grinder and grind to a powder. Transfer to a small bowl and stir in brown sugar until thoroughly combined.
