River Cottage's Grilled Trout with Fennel

Ingredients
2 trout fillets
2 tablespoons olive oil
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 fennel bulb, thinly sliced
2 cloves garlic, minced
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley leaves
Directions
Take four 4-inch lengths of the freshest fennel sticks and bash them with a rolling pin to release their flavor. Put a piece inside each fish, along with a crushed garlic clove, a bay leaf, and some seasoning. Lightly brush the fish with oil and season the skin–do this generously, as the cooking will burn off a lot of the seasoning.
