Ingredients
2 tablespoons olive oil
1 large onion, diced
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt and pepper to taste
2 cups cooked chicken, shredded or cubed
4 cups chicken broth
1 can white beans, drained and rinsed
8 ounces uncooked pasta
2 tablespoons fresh parsley, chopped
Directions
In large saucepan or Dutch oven, heat 1 tablespoon oil and pancetta over medium heat. Cook, stirring, until pancetta is cooked and crispy, about 5 minutes.
