Ingredients

2 skinless salmon fillets

2 tablespoons olive oil

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

2 tablespoons unsalted butter

2 shallots, minced

2 tablespoons chopped fresh chives

1 tablespoon freshly squeezed lemon juice

4 ounces cream cheese, at room temperature

Directions

In a large saucepan, combine salmon with enough cold water to cover by 1 inch. Add juice from 1 lemon, leek or onion, celery, and bay leaf .
