Ingredients
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon garam masala
1/4 teaspoon turmeric powder
2 cups cooked chickpeas, drained and rinsed
2 potatoes, peeled and diced into small cubes
3 cups fresh spinach leaves, roughly chopped
Salt to taste
Cilantro Chutney:
2 cups fresh cilantro leaves, washed and roughly chopped
1 green chili pepper, seeded and chopped
Juice of one lime
Directions
Place potatoes in a large saucepan and cover with water by 1-inch. Season to taste with salt. Bring to a boil and simmer until potatoes are tender but not falling apart, about 10 minutes. Drain and set aside.
