Ingredients

1 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

¼ teaspoon ground cinnamon

Salt and freshly ground black pepper, to taste

14 ounces extra firm tofu, crumbled

2 tablespoons tomato paste

3 tablespoons water or vegetable broth

2 tablespoons chopped fresh parsley leaves

Directions

In a medium nonstick or cast iron skillet, heat olive oil over low heat until barely warm. Add Urfa chilies, oregano , onion, and peppers. Season with salt and a very generous amount of black pepper. Cook, stirring frequently, until very soft, about 8 minutes. Add tomatoes and continue to cook, stirring frequently, until deepened in color, about 5 minutes longer. Remove half of mixture and reserve.
