Ingredients
2 bison ribeye steaks, about 1 inch thick
2 tablespoons butter, melted
2 cloves garlic, minced
1 teaspoon fresh thyme leaves, chopped
Salt and freshly ground black pepper to taste
2 tablespoons olive oil
4 medium potatoes, peeled and cut into wedges
2 tablespoons fresh parsley, chopped
Directions
Season steak liberally on all sides with salt and pepper. Set on wire rack set in rimmed baking sheet and place in refrigerator uncovered overnight.
