Ingredients

1 lb gluten-free macaroni noodles

2 tablespoons butter

2 tablespoons gluten-free all-purpose flour

2 cups milk

1 teaspoon garlic powder

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 teaspoon pepper

3 cups shredded cheddar cheese, divided

1/2 cup grated Parmesan cheese

Directions

Preheat oven to 350°F . Grease a 9x13 inch baking dish with butter or non-stick cooking spray. In a large pot, bring water to a boil and cook macaroni noodles according to package instructions. Drain and set aside. In a medium saucepan, melt butter over medium heat. Add flour and whisk until combined and bubbly, about 1 minute. Slowly add milk while whisking continuously until mixture is smooth and thickened, about 5 minutes. Remove from heat and stir in Parmesan cheese, 2 cups of cheddar cheese, pepper, salt, nutmeg, and garlic powder until cheese is melted and sauce is smooth. Pour macaroni noodles into prepared baking dish and pour cheese sauce over top. Sprinkle remaining cup of cheddar cheese over top of macaroni and cheese. Bake for 25 minutes or until golden brown on top. Let cool for 10 minutes before serving. Enjoy!.
