How to make?
Ingredients
1 tablespoon vegetable oil
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
2 tablespoons fermented black beans
2 tablespoons chili bean paste
1/4 cup chicken broth or water
1 pound firm tofu, cut into cubes
3 ramps, thinly sliced
2 teaspoons cornstarch mixed with 2 tablespoons water
1 teaspoon sesame oil
Salt to taste
Directions
Heat half of sichuan peppercorns in a large wok over high heat until lightly smoking. Transfer to a mortar and pestle. Pound until finely ground and set aside.
