Ingredients

1 lb flank steak

1/4 cup olive oil

1 large onion, chopped

2 cloves garlic, minced

1 green bell pepper, chopped

1 red bell pepper, chopped

1 can diced tomatoes with juice

2 tablespoons tomato paste

2 tablespoons white vinegar

2 teaspoons ground cumin

1 teaspoon dried oregano leaves

Salt and freshly ground black pepper to taste

Directions

Preheat oven to 350 degrees F . Cut flank steak into large pieces that will fit on the bottom of a Dutch oven in 2 batches. Season with salt and pepper. Heat oil in Dutch oven over medium-high heat until shimmering. Working in batches, add steak and cook, turning, until browned, about 6 minutes per batch. Transfer steak to a plate and set aside.
