Ingredients
2 large eggplants, cut into 1-inch cubes
4 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Salt and freshly ground black pepper, to taste
2 cups vegetable broth or water
2 tablespoons balsamic vinegar
2 tablespoons chopped fresh basil leaves
Directions
Combine 1 1/2 cups water, soy sauce, sugar, and chili bean sauce in a small bowl and stir. Combine 1/4 cup water and the cornstarch in a separate bowl.
