Ingredients
1 whole duck
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
2 teaspoons dried thyme
2 teaspoons dried rosemary
2 cloves garlic, minced
1/4 cup rendered duck fat or vegetable oil
3 bay leaves
4 cups chicken stock or water
Directions
Season duck legs evenly on all sides with salt; set aside. Combine shallots, onion, garlic, and parsley in food processor bowl and pulse until finely chopped but not puréed, about 15 pulses.
