Ingredients
1 cup orzo
2 tablespoons olive oil
2 cloves garlic, minced
1 pint cherry tomatoes, halved
2 tablespoons capers, drained and rinsed
Juice of 1 lemon
Salt and pepper to taste
Fresh parsley for garnish
Directions
Pour the olive oil into a large skillet set over medium heat. Dump in the tomatoes and the garlic and cook, stirring often, until the tomatoes become a little soft, about 3 minutes. Turn off the heat and set aside.
