Ingredients
1 pound long beans, trimmed and cut into 2-inch pieces
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/4 cup diced tomatoes
1/4 cup chicken broth or vegetable broth
2 tablespoons chopped fresh mint leaves
Salt and freshly ground black pepper, to taste
Directions
In a large sauté pan, add 3 tablespoons olive oil, garlic, and red pepper flakes. Set over medium heat and cook, stirring, until garlic is lightly golden, about 4 minutes.
