Ingredients

1 pound dried black-eyed peas

1 large ham hock

2 tablespoons olive oil

1 onion, diced

3 cloves garlic, minced

2 teaspoons smoked paprika

1 teaspoon ground cumin

½ teaspoon dried oregano

¼ teaspoon cayenne pepper

6 cups chicken broth or water

Salt and freshly ground black pepper, to taste

Directions

Preheat the oven to 350 degrees . Heat the oil in the pot and sweat the onion over medium heat until translucent, about 5 minutes. Add the celery and garlic and cook for another 2 minutes.
