Ingredients
1 large spaghetti squash
1 tablespoon olive oil
1/2 pound Italian sausage, casings removed
3 cloves garlic, minced
2 cups chopped kale leaves
1/4 cup sun-dried tomatoes, chopped
Salt and freshly ground black pepper to taste
Grated Parmesan cheese for serving
Directions
Preheat oven to 375°F . Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the squash halves cut-side down on a baking sheet lined with parchment paper or foil. Bake for 30 minutes, or until tender when pierced with a fork. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add sausage and cook, breaking it up into small pieces as it cooks, until browned and cooked through, about 8 minutes. Add garlic and cook for 1 minute more. Stir in kale and sun-dried tomatoes and cook until kale is wilted, about 3 minutes more. Season with salt and pepper to taste. When squash is done cooking, use a fork to scrape out the strands of spaghetti squash into a bowl or onto plates. Top with sausage mixture and sprinkle with Parmesan cheese if desired before serving.
