Ingredients
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon kosher salt
1 1/4 cups cold seltzer water
Vegetables and/or shrimp of your choice, cut into bite sized pieces
Vegetable oil for frying
Directions
Heat oil to 375 degrees F in a large wok over high heat, then adjust heat as necessary to maintain the temperature. Line a large plate or baking sheet with a double layer of paper towels.
