Ingredients
1/2 cup of diced red onion
1/4 cup of diced celery
1/4 cup of diced red bell pepper
1 tablespoon of olive oil
3 cloves of garlic, minced
1 teaspoon of smoked paprika
1 teaspoon of ground cumin
1/2 teaspoon of chili powder
Salt and pepper to taste
2 cups of cooked black beans, drained and rinsed
1 can of fire roasted tomatoes, undrained
2 tablespoons of tomato paste
3 cups vegetable broth
2 tablespoons fresh lime juice
Hot sauce to taste
Directions
Combine the celery, beets, horseradish, sugar, and salt in a quart jar. Shake to combine and refrigerate for 72 hours, shaking once a day to help dissolve the sugar.
