Ingredients

1 can chickpeas, drained and rinsed

1/4 cup diced red onion

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

1 avocado, mashed

Juice of 1/2 lemon

Optional toppings: diced tomatoes, sliced scallions, vegan sour cream

Directions

Bring 2 cups of water to a boil over high heat. Add bulgur wheat and cook until tender, about 10 minutes. Drain carefully.
