Butterscotch "Salty Oat" Cookies Recipe

Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup butter, softened

3/4 cup packed light brown sugar

3/4 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups old fashioned oats

1 cup butterscotch chips

1/2 cup chopped pecans

Directions

Preheat oven to 350°F . Line baking sheets with parchment paper or silicone baking mats. In a medium bowl, whisk together the flour, salt, and baking soda; set aside. In a large bowl, beat together the butter and sugars until light and fluffy. Beat in the eggs one at a time until combined. Beat in the vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Stir in the oats and butterscotch chips . Drop dough by rounded tablespoonfuls onto prepared baking sheets about 2 inches apart. Bake for 10-12 minutes or until golden brown around edges and slightly soft in center when lightly touched with finger. Cool on baking sheet for 5 minutes before transferring to wire rack to cool completely. Enjoy!.
