  • 1/2 cup diced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies, undrained

  • 3/4 cup shredded Mexican cheese blend or Cheddar cheese, divided use
  • For the Cornbread Crust:
  • 3 tablespoons butter, melted and cooled slightly
  • 3/4 cup yellow cornmeal mix
  • 2 tablespoons sugar
  • 3/4 cup milk

Directions

Adjust oven rack to center position and preheat oven to 425 degrees F. Heat butter in a 12-inch cast iron or stainless steel skillet over medium heat until melted.
