Tea-Smoked Chicken Wings Recipe

Ingredients
2 pounds chicken wings
1/4 cup Chinese five-spice powder
1/4 cup kosher salt
2 tablespoons sugar
1 tablespoon freshly ground black pepper
2 tablespoons Sichuan peppercorns, lightly crushed
2 tablespoons smoked paprika
1 teaspoon cayenne pepper
1/4 cup white rice
3 green cardamom pods, lightly crushed
3 cloves garlic, minced
2 tablespoons fresh ginger, grated
1/4 cup vegetable oil
2 tablespoons sesame oil
3 star anise pods, lightly crushed
6 cups of wood chips
Directions
Combine soy sauce, vinegar, 1/4 cup honey, ginger, and garlic in small bowl and whisk to combine. Place chicken wings in medium bowl and add 1/4 cup of soy sauce mixture. Marinate at room temperature for 30 minutes. Meanwhile, add remaining honey, scallions, and red pepper flakes to small bowl with remaining soy mixture. Stir to combine and set aside.
