Ingredients
1 lb. cooked shrimp, peeled and deveined
1 lb. cooked calamari, cut into rings
1/2 cup pitted black olives
1/4 cup capers, drained
2 cloves garlic, minced
3 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper to taste
Lettuce leaves for serving
Directions
In a nonreactive bowl, combine scallops with 6 tablespoons lemon juice and toss well. Refrigerate for at least 1 hour and up to 2 hours.
