Ingredients
2 red bell peppers, roasted and peeled
1/2 cup slivered almonds, toasted
2 cloves garlic, minced
1/4 cup extra virgin olive oil
2 tablespoons sherry vinegar or red wine vinegar
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
Salt and freshly ground black pepper, to taste
Directions
Preheat oven to 350 degrees F . Line a rimmed baking sheet with aluminum foil and place tomatoes and half of the garlic head on it. Roast in the oven until tomatoes are wrinkled and lightly charred in spots and garlic is soft, about 1 hour. Let cool.
