Ingredients
2 leeks, trimmed and thinly sliced
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 eggs, lightly beaten
1/4 cup milk
2 tablespoons olive oil, plus more for frying
2 cups mixed vegetables , finely chopped
Lemon Cream:
1/2 cup sour cream
2 tablespoons freshly squeezed lemon juice
Salt and pepper to taste
Directions
In a medium bowl combine the vegetables with the olive oil and season with salt and pepper. Set aside. In a separate bowl whisk together the milk and eggs until combined. Add in the salt, baking powder and flour and mix until just combined. Fold in the vegetable mixture and leeks until evenly distributed throughout the batter. Heat a large skillet over medium heat with enough olive oil to coat the bottom of the pan. Drop spoonfuls of batter into the hot oil and cook for about 3.
