Ingredients
2 tablespoons vegetable oil
1 large onion, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon ground ginger
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 tablespoons brown sugar
2 cups chicken broth or water
1/4 cup red bell pepper, diced small
1/4 cup tomato, diced small
Salt and freshly ground black pepper, to taste
Directions
Preheat oven to 400 degrees F and set oven racks in the top- and bottom-third positions. Line two rimmed baking sheets with parchment paper.
