4 large eggs
2 English muffins, split and toasted
4 slices of Canadian bacon or ham
Hollandaise sauce
Salt and pepper to taste
Hollandaise Sauce
3 egg yolks
1 tablespoon freshly squeezed lemon juice
1/2 cup butter, melted and hot
Pinch of cayenne pepper
Directions
Brown Canadian bacon in a skillet. Plate English muffins cut side up. Place two slices of Canadian bacon on top of each muffin half, top with a poached egg.
