Greek Chicken Flatbread

Ingredients
2 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Salt and pepper to taste
2 flatbreads or pita breads
1/4 cup crumbled feta cheese
1/4 cup chopped tomatoes
1/4 cup sliced red onion
2 tablespoons chopped fresh parsley
Directions
Preheat oven to 375 degrees F . In a small bowl, mix together the parsley, red onion, tomatoes, feta cheese, garlic powder, oregano and olive oil. Set aside. Place chicken breasts on a baking sheet and season with salt and pepper to taste. Bake in preheated oven for 25 minutes or until cooked through. Remove from oven and let cool before shredding into small pieces with two forks. Heat flatbreads or pita breads in the oven for 5 minutes or until lightly toasted. Remove from oven and top each one with half of the chicken mixture and half of the parsley mixture. Return to oven and bake for an additional 10 minutes or until heated through and cheese is melted. Serve warm.
