8 ounces dark chocolate, chopped

1/2 cup unsalted butter, plus more for greasing the ramekins

6 large eggs, separated

1/4 cup granulated sugar

2 tablespoons all-purpose flour

Pinch of salt

2 tablespoons Grand Marnier or other orange liqueur

2 cups heavy cream

6 egg yolks

1/3 cup granulated sugar


Preheat oven to 375°F. Grease 8 ramekins with butter and place on a baking sheet. Set aside. In a medium bowl, whisk together 2 tablespoons Grand Marnier, 1/3 cup granulated sugar, and 6 egg yolks until light and fluffy. Slowly add in 2 cups heavy cream while whisking constantly until combined. Set aside. In a separate bowl, whisk together the pinch of salt, 2 tablespoons all-purpose flour, and 1/4 cup granulated sugar until combined. Add in 6 egg whites and whisk until stiff peaks form.
