Thai Pineapple Fried Cauliflower Rice

Ingredients

1 head of cauliflower, cut into florets

1/4 cup vegetable oil

2 cloves garlic, minced

1/2 red onion, diced

1 red bell pepper, diced

1 cup pineapple chunks

3 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons brown sugar

1 teaspoon ground ginger

1 teaspoon ground turmeric

Salt and pepper to taste

, 1/4 cup fresh cilantro, chopped Heat the vegetable oil in a large skillet over medium-high heat. Add the cauliflower florets and cook for 5 minutes, stirring occasionally. Add the red bell pepper, onion, garlic, turmeric, ginger, brown sugar, fish sauce and soy sauce to the skillet and stir to combine. Cook for an additional 5 minutes or until vegetables are tender. Add the pineapple chunks and cook for 2 minutes more. Remove from heat and stir in the cilantro. Taste and adjust seasoning with salt and pepper as desired. Serve warm or at room temperature. Enjoy!.
