Korean Chicken and Rice Porridge (Dak Juk) Recipe

Ingredients
1 lb boneless, skinless chicken thighs
2 cups short grain white rice
8 cups chicken broth
1 onion, diced
2 cloves garlic, minced
1 teaspoon ginger, grated
1 teaspoon sesame oil
2 tablespoons soy sauce
Salt and pepper to taste
3 scallions, thinly sliced
Directions
, cut into 1-inch cubes Heat a large pot over medium heat and add the sesame oil. Add the onion, garlic, ginger, and scallions and cook until softened, about 5 minutes. Add the chicken and cook until lightly browned, about 5 minutes. Add the soy sauce and chicken broth and bring to a boil. Reduce heat to low and add the rice. Simmer for 20 minutes or until rice is cooked through. Season with salt and pepper to taste before serving.
