Ingredients

8 large eggs

2 tablespoons olive oil

1/2 cup chopped onion

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

2 cloves garlic, minced

8 ounces mushrooms, sliced

4 cups fresh spinach leaves, washed and chopped

1/2 cup grated Parmesan cheese

Directions

Preheat oven to 375°F. Grease a 9-inch pie plate with cooking spray. Heat olive oil in a large skillet over medium heat. Add onions and mushrooms and cook until softened, about 5 minutes. Add garlic, spinach, salt and pepper and cook for an additional 2 minutes. Remove from heat and set aside. In a large bowl, whisk together eggs until combined. Stir in Parmesan cheese, mushroom mixture, and mix until everything is evenly distributed. Pour the egg mixture into the prepared pie plate. Bake for 25-30 minutes or until the center is set and lightly golden brown on top. Let cool slightly before serving warm or at room temperature. Enjoy!.
