Ingredients

1 lb swordfish steak, cut into 1-inch cubes

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

8 wooden skewers, soaked in water for 30 minutes

Directions

In a medium bowl, combine the scallions, cilantro, lemon juice, ginger, and mustard. Whisk in the oil. Season the swordfish with 1 tsp. salt and 1/2 tsp. pepper, then toss with the marinade. Let sit at room temperature while the grill heats. Prepare a medium-high gas or charcoal grill fire. Thread the swordfish onto metal or soaked wooden skewers, and grill, covered and turning occasionally, until cooked through, about 8 minutes. Remove from the heat, and sprinkle with more cilantro. Serve immediately with lemon wedges on the side.
