Grilled Shrimp with Walnuts and Scallions

Ingredients
1 lb. large shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped walnuts
3 scallions, thinly sliced
2 tablespoons freshly squeezed lemon juice
Directions
Preheat a grill to medium-high heat. In a small bowl, whisk together the lemon juice, scallions, walnuts, black pepper, salt, garlic and olive oil until combined. Place the shrimp in a large bowl and pour the marinade over them. Toss to coat evenly. Let sit for 10 minutes. Thread the shrimp onto skewers and place on the preheated grill. Grill for 3-4 minutes per side or until cooked through and lightly charred. Serve with extra lemon wedges if desired. Enjoy!.
