Ingredients
1 cup bulgur wheat
2 cups water
1/4 teaspoon salt
2 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon ground black pepper
1/4 cup chopped fresh parsley leaves
1 large apple, cored and diced into small cubes
1/4 cup dried cranberries or raisins
3 tablespoons toasted pine nuts
Directions
In a medium saucepan, bring the water to a boil over high heat. Add the bulgur wheat and reduce the heat to low. Simmer for 10 minutes, stirring occasionally. Remove from heat and let stand for 5 minutes, or until all of the liquid is absorbed. Fluff with a fork and set aside to cool. In a large bowl, combine the cooled bulgur wheat, pine nuts, cranberries or raisins, apple cubes, parsley leaves, black pepper, lemon juice, olive oil and salt. Stir until everything is evenly combined. Serve at room temperature or chilled. Enjoy!.
