Chocolate Mayonnaise Cake with Marshmallow Frosting

Ingredients

  • 2 cups all-purpose flour )
  • 3/4 cup unsweetened cocoa powder )
  • 1 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 3 large eggs
  • 1 3/4 cups granulated sugar
  • 2 tsp vanilla extract
  • 1 cup + 2 Tbsp Hellmann's® or Best Foods® Mayonnaise
  • 1 1/3 cups warm water
  • Chocolate shavings,
  • 4 large egg whites )
  • 1 cup granulated sugar
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with non-stick cooking spray.
  2. In a medium mixing bowl whisk together flour, cocoa powder, baking soda and baking powder for 20 seconds, set aside.
  3. In a separate large mixing bowl, using an electric hand mixer set on high speed, beat eggs, sugar and vanilla for 3 minutes. Blend in mayonnaise.
  4. Mix half of the flour mixture into the sugar/mayonnaise mixture, mix in the water then mix in remaining flour mixture. Pour into prepared pan.
  5. Bake in preheated oven until toothpick inserted into center comes out clean, about 34 – 38 minutes. Let cool completely on a wire rack (I like to cover about halfway through to seal in moisture).
  6. Frost completely cooled cake with marshmallow frosting then top with chocolate shavings.
