Best Buttermilk Pancakes with Fresh Raspberry Syrup

Ingredients
1 1/4 cups oat flour*
1 1/4 cups all-purpose flour
2 Tbsp sugar
2 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups buttermilk
3/4 cup milk
2 eggs
2 Tbsp butter
1 cup fresh raspberries
1/2 cup cold water
2 tsp cornstarch
1/2 cup granulated sugar
Directions
Preheat griddle to 325 degrees. In a small mixing bowl, sift together oat flour, all-purpose flour, sugar, baking powder, baking soda and salt. In a large mixing bowl combine buttermilk, milk, egg and melted butter. Stir in dry ingredients. Pour 1/3 cup mixture onto buttered preheated griddle. Flip pancake when bubbles start to appear on surface and bottom is golden. Serve topped with your favorite syrup and butter or whipped cream. *Oat flour can be purchased in the health food section of most super-markets.
