Cucumber Yogurt Salad
Cool cucumber yogurt salad with dill, salt, and pepper is a crisp, creamy bowl that comes together with almost no effort.

Ingredients
- 2 cucumbers, peeled, quartered lengthwise, then sliced
- Plain yogurt, about 1 cup
- 1 teaspoon dried dill, or a couple of teaspoons of fresh dill
- Sprinkling of salt and pepper
Directions
- Start by tasting your cucumber slices; you want to catch any bitterness before they meet the yogurt. Depending on the cucumber and a handful of other variables, one can sometimes taste noticeably sharp and bitter. If yours does, give the slices a bath in salted water for half an hour, or longer, until the harsh edge fades, then rinse them well and let them drain before you move on.
- For the salad itself, all you do is fold everything together gently. Add salt and pepper until it tastes right to you.
