2 tablespoons olive oil
7 oz
2 scallions or spring onions
4 large eggs
1/4 cup shredded mozzarella cheese
Cracked pepper to season
Directions
Preheat oven to 400°F . Place the potatoes in a large saucepan and cover with cold water. Bring to a boil, reduce heat and simmer for 10 minutes or until just tender. Drain and set aside. Heat the oil in a large ovenproof skillet over medium-high heat. Add the bacon and cook for 5 minutes or until golden brown and crisp. Remove from the pan with a slotted spoon and set aside on paper towels to drain off any excess fat. Add the potatoes to the same skillet and cook for 8 minutes or until golden brown, stirring occasionally. Add the scallions or spring onions, season with cracked pepper, then stir in the bacon pieces and cheese. Make four wells in the hash mixture and crack an egg into each one, then transfer to preheated oven for 10 minutes or until eggs are cooked to your liking . Serve hot with extra cracked pepper if desired. Enjoy!.
